Once the pasta is done, I reserve a cup of the pasta water and then drain the pasta. I add the pasta to the bowl with the egg mixture, along with some of the reserved pasta water and some diced pancetta or bacon.

Therefore, I toss everything together quickly over low heat until the sauce is creamy and well combined. I finish the dish with a generous amount of black pepper and some extra parmesan cheese.
